All In My Grill

I've skipped another day, but I'm back. This is post #4 in my 30 Day Blog Challenge (say it like dude on that episode of the Cosby Show) - What I Ate Today - or yesterday, in this case.

Breakfast: I had my cheese grits, sausage, and coffee (with a little sugar and hazelnut creamer) at the office because I was moving a little too slow to eat at home and I hate to eat in a rush. I usually have a cup of strawberry applesauce, as well, but I got sidetracked before I got a chance to eat it.
Stop looking at my pinstripes. :P


Lunch: There's no picutres of my grilled chicken breast patty, my water, or my vegetable soup, but I'm sure y'all know what it looks like. Here's the recipe for my quick and easy homemade vegetable soup, though:
  • Pour a half a bag of steamed mixed vegetables into a tupperware container
  • Cover in a thick layer of your favorite marinara sauce
  • Add between a half a cup and 1 whole cup of water, depending on your how strong you want your tomato broth.
  • Add freshly ground black pepper, freshly ground sea salt, herbs de provence, italian seasoning, parsely, savory, and crushed bay leaf to season (The culinary bay leaf is NOT poisonous, despite popular belief, except to insects. It's actually very, very good for humans.).
  • Put lid tightly on container, shake to combine, and microwave for 1 minute.
  • Enjoy.
Dinner: I've had mofongo on the brain all week, but I wasn't free to get any from the Puerto Rican spot around the corner until last night. I went with the mofonfo con carne frita (literally, fried meat. Pork, in this case), which was better than the pernil I'd had from there before. For those that don't know, mofongo is a dish made from fried green plantains, roughly mashed up with garlic, and shaped into a little mound. Depending on your familia, some kind of meat, seafood, and/or sauce may be found in the middle of the mound or on top of it. I also tried a little bit of my cowoker's leftover shrimp fried rice. Twas surprising good, considering it came from the fish market. Maybe it was the better quality of shrimp that did it. *shrugs* Washed it all down with water to maintain some semblance of healthiness.
